Ingredients
- 75ml white wine vinegar
- ½ tsp salt
- 1 tsp caster sugar
- ½ red onion, thinly sliced
- 1 tbs oil
- 350g steak
- 1 sachet Schwartz Bearnaise Sauce
- 300ml semi-skimmed milk
- 30g unsalted butter
- 400g fries, cooked according to pack directions
- 50g rocket salad

Instructions
Loaded fries topped with sliced steak, rocket, Bearnaise sauce and quick-pickled red onion.
- Make a quick pickle for the onion by combining the vinegar with salt and sugar. Add the onion and set aside.
- Heat a frying pan over a high heat. Rub the oil over the steak, season well and cook to your liking. Remove from the pan and set aside to rest.
- Combine the sachet contents with the milk in a small saucepan. Bring to the boil, stir in the butter and simmer for a couple of minutes, stirring continuously.
- Arrange the cooked fries in a large serving dish, slice the steak and arrange over the fries with the rocket.
- Drizzle over the Bearnaise sauce and finish with the pickled red onion garnish.
