- 500 mixed nuts of choice
- 1 thyme
- 1 rosemary
- 1/4 chillies crushed
- 1 fine sea salt
- 2 light brown sugar
- 2 olive oil

- Pre-heat oven to 200 degrees *
- In a medium bowl mix olive oil with sugar, salt, herbs and chilli flakes until combined. *
- Add the nuts to the herb mix and mix well until they are well coated. *
- Line a baking tray with parchment and spread the nuts out in a single layer, you may need two baking trays. Bake in the center of a pre-heated oven for 10-15 minutes, checking and stirrring halfway through cooking. *
- Remove from the oven, leave to cool. Once cold store in an airtight container or jar for up to a month. *
