  • 500 mixed nuts of choice
  • 1 thyme
  • 1 rosemary
  • 1/4 chillies crushed
  • 1 fine sea salt
  • 2 light brown sugar
  • 2 olive oil

  1. Pre-heat oven to 200 degrees *
  2. In a medium bowl mix olive oil with sugar, salt, herbs and chilli flakes until combined. *
  3. Add the nuts to the herb mix and mix well until they are well coated. *
  4. Line a baking tray with parchment and spread the nuts out in a single layer, you may need two baking trays. Bake in the center of a pre-heated oven for 10-15 minutes, checking and stirrring halfway through cooking. *
  5. Remove from the oven, leave to cool. Once cold store in an airtight container or jar for up to a month. *
