Ingredients
- 1 tbs oil
- 500g chicken thigh fillets
- 2 tbs French's American Mustard
- 1 sachet Rubs of the World Sweet & Smoky
- 2 tbs ketchup
- 2 tbs honey
- 50ml water
- 400g French fries
- 75g mozzarella and cheddar mix, grated
- 2 spring onions, chopped
- 1 medium heat red chilli, sliced

Instructions
Loaded fries topped with pulled chicken cooked in Sweet & Smoky Rub, ketchup, honey and mustard.
- Preheat the oven to 180°C, 350°F, Gas Mark 4. Reserve 1 tsp of the rub for the fries.
- Brush the chicken thighs with mustard, then place in a roasting dish. Sprinkle over the rub and turn to coat.
- Add the water, ketchup and honey, then cook for 30-35 minutes until cooked through.
- Meanwhile, cook the fries according to pack instructions.
- Rest the chicken for a few minutes, then shred with two forks in the cooking juices.
- Toss the fries with the remaining seasoning, place in a large ovenproof bowl and top with the pulled chicken, grated cheese, spring onion and chilli.
- Finish in the oven for a further 5 minutes until the cheese has melted.
