- 500g lamb mince, 20% fat
- 1 sachet Rubs of the World Citrus & Herb
- 4 pittas
- 100g Greek yoghurt
- ½ cucumber, grated
- ½ tsp Schwartz Mint
- 2 tbs olive oil
- 100g mixed leaves
- 150g tomatoes, chopped
- ½ red onion, thinly sliced

Lamb koftas seasoned with Citrus & Herb Rub, served with pitta, tzatziki and salad.
- Combine the lamb mince with the rub, reserving 2 tsp for the salad. Form into koftas around skewers.
- Cook on the BBQ, in a griddle pan or air fryer for 10-15 minutes until cooked through.
- Meanwhile, combine the cucumber with the mint and 1 tbs olive oil for the tzatziki.
- Mix the remaining rub with the remaining oil and toss through the leaves.
- Finish the pitta in the grill or oven.
- Serve the koftas with the pitta, tzatziki and salad.
