- 1 ripe avocado
- 75ml sour cream
- 1 sachet Rubs of the World Garlic & Lime Mexican Seasoning
- 1 mango, peeled and diced
- ½ red bell pepper, diced
- ½ red onion, chopped
- ¼ tsp Chilli Flakes
- Juice of 1 lime
- 2 tbs fresh coriander, chopped
- Salt, to taste
- 2 tbs oil
- 500g King prawns, peeled and defrosted if frozen
- 8 corn and wheat tortillas
- Extra coriander leaf, to garnish

King prawn tacos with Garlic & Lime Rub, avocado crema, mango salsa and fresh coriander.
- For the avocado crema, combine the avocado, sour cream and 1 tsp of the rub in a blender and whizz until smooth.
- For the salsa, combine the mango, pepper, onion, chillies, lime juice and coriander in a bowl. Season and set aside.
- Combine the remaining rub with the oil, add the prawns and turn to coat evenly.
- Thread the prawns onto skewers for even cooking and cook directly on the barbecue or on a hot griddle pan for 2 minutes on each side, or until charred and cooked through. Remove from the skewers.
- Warm the tortillas and build the tacos with avocado crema, King prawns, mango salsa and extra coriander leaf to garnish.
