  • 1 ripe avocado
  • 75ml sour cream
  • 1 sachet Rubs of the World Garlic & Lime Mexican Seasoning
  • 1 mango, peeled and diced
  • ½ red bell pepper, diced
  • ½ red onion, chopped
  • ¼ tsp Chilli Flakes
  • Juice of 1 lime
  • 2 tbs fresh coriander, chopped
  • Salt, to taste
  • 2 tbs oil
  • 500g King prawns, peeled and defrosted if frozen
  • 8 corn and wheat tortillas
  • Extra coriander leaf, to garnish

  1. For the avocado crema, combine the avocado, sour cream and 1 tsp of the rub in a blender and whizz until smooth.
  2. For the salsa, combine the mango, pepper, onion, chillies, lime juice and coriander in a bowl. Season and set aside.
  3. Combine the remaining rub with the oil, add the prawns and turn to coat evenly.
  4. Thread the prawns onto skewers for even cooking and cook directly on the barbecue or on a hot griddle pan for 2 minutes on each side, or until charred and cooked through. Remove from the skewers.
  5. Warm the tortillas and build the tacos with avocado crema, King prawns, mango salsa and extra coriander leaf to garnish.
