- 1 baking powder
- 50 unsalted butter, room temperature
- 1/4 sea salt mill adjustable
- 1 cinnamon ground
- 25 caster sugar
- 1 Large egg
- 125 whole milk
- Easy Cranberry jam
- 300 frozen cranberries
- 1 1/2 mixed spice
- 1 orange, zest
- 75 caster sugar
- 125 Clotted cream

- For the easy cranberry jam: In a medium saucepan, add cranberries first, followed by mixed spice and orange zest. On a medium high heat, cook for 5 minutes until the cranberries are entirely broken down.

- Add the sugar, bubble for a minute or two and its done! Remove from the heat and leave to cool.

- For the scones - In a medium bowl, mix flour and baking powder, rub in butter with your fingers until it has a breadcrumb texture.

- Add sugar, salt and cinnamon and mix well by hand or with a spoon if you prefer.
- *
- In a small bowl whisk egg and milk until combined. Slowly incorporate this with a spoon to the dry mix until it is a slightly sticky dough. (you will be left with a little milk/egg mix, this is the egg wash)

- Flatten the dough, using a little flour until it is 2cm in height. Dip a round cutter (6-7cm) in flour and cut straight down - do not twist. Repeat until all scones are cut out.

- Brush scones with the reserved milk/egg mixture, trying not to get any liquid down the sides as this will prevent them from rising.

- Place on rack in the air fryer at 200°C for 10 minutes, until golden brown.

- Serve still warm with clotted cream and cranberry jam.
