- Pre-heat oven to 200°C / 400°F / 180°C Fan / Gas Mark 6.
- Unroll the puff pastry onto a lined baking sheet. Add a layer of chopped up Christmas leftovers down one third of the pastry.
- Add a sprinkle of Chilli Flakes and Sage. Brush one margin of the pastry with egg. Fold the pastry over the filling and seal. Decorate with any leftover pastry pieces.
- Brush with beaten egg and add a sprinkle of Fennel seeds and a pinch of sea salt.
- Bake for 20-25 mins until golden brown, serve while still warm.
