Perfect for rounding out everyday meals, this unexpected combination of juicy grilled watermelon, crisp cucumbers, and crumbly feta is all things sweet, savoury, and tangy in every delicious bite of this watermelon salad. Tie it all together with a bright and vibrant homemade dressing of maple syrup, sherry, lime, and Schwartz® Dried Mint.
Ingredients
- Salad
- 1 small watermelon skin/seeds removed and cut into 2cm cubes (approx. 675g)
- 200 feta, crumbled
- 1 small red onion very finely sliced (approx. 75g)
- 125 radishes, very thinly sliced
- 25 black olives, halved
- 125 cucumber, roughly chopped
- Dressing
- 1 mint
- 1 sherry vinegar
- 1 maple syrup
- 2 extra virgin olive oil
- 1 sea salt mill adjustable finely ground
- 1/2 black peppercorns mill adjustable finely ground
- 1 Lime, zest & juice
- To Serve
- 1/2 chillies crushed 75g
- 1 Lime, cut into wedges

- In a small bowl, make the dressing by whisking all the ingredients together. *
- On a BBQ or in a dry frying pan, heat till smoking and add watermelon in a single layer and cook till charred on all sides. Remove to a plate and set aside.

- In a large bowl, toss the charred watermelon, onion, olives, cucumber,shredded mint, radishes and dressing together. *
- On your serving plate, add the dressed salad ingredients, top with crumbled feta, fresh mint leaves and chilli flakes. Serve with extra lime wedges on the side. *
