- PREHEAT oven to 160°C / 325°F / 140°C Fan / Gas Mark 3. Melt butter in medium saucepan on medium heat. Stir in Mustard, sugar, honey and pepper. Bring to boil. Reduce heat; simmer 2 to 3 minutes or until thickened.
- PLACE the gammon on its side in roasting pan. Brush 1/2 of the glaze mixture over gammon, gently separating the slices so mixture can reach middle. Cover loosely with foil.
- BAKE 1 hour, brushing occasionally with pan drippings. Remove foil. Brush with remaining glaze mixture. Bake 45 minutes longer. Serve ham with pan drippings.
Cooking Tips:
For an extra festive look, and easier slicing, look for a spiral cut gammon joint, or ask your butcher to spiralize. If you don't have a sprial cut gammon joint, score the meat in a criss cross pattern by making diagonal cuts about 1/2 cm deep and 2-3 cm apart. Brush glaze into cuts for maximum flavor.
