- 2 Zesty All-Rounder Seasoning
- 2 olive oil
- 1 avocado, cut into cubes
- 1 bunch fresh coriander, chopped
- 8 mini tortillas
- Quick pickled red onion
- 1 red onion, finely sliced
- 1 lime, juice
- 1/4 sea salt
- Sour Cream Dressing
- 200 sour cream
- 1/2 Zesty All-Rounder Seasoning
- To Serve
- 1 lime, wedges
- 2 fresh jalapenos, sliced

- In a dish, marinate the chicken thighs with olive oil and zesty seasoning for 30 minutes.

- Once finished marinating, pre-heat oven to 200 degrees fan.

- Roast on a baking tray lined with baking paper for 25-30 minutes until browned and cooked through.

- In a medium bowl, mix the onion, lime juice and salt by hand, crunching everything together. Set aside.

- Mix the ingredients for the sour cream dressing and set aside.

- Once the chicken is cooked, use 2 forks to shred the chicken and set aside. *
- In a dry frying pan, char tortillas.

- Serve 2 tacos per person, start with sour cream sauce, followed by chicken, avocado and pickled red onion. Finish with fresh coriander and sliced jalapenos and serve with lime wedges. *
