- In a medium bowl add dry ingredients and mix well with a whisk. Make a well in the centre and add egg yolks, milk, and vanilla seeds and whisk slowly until you have smooth batter. Add your cooled melted butter and whisk again.
- In a separate bowl whisk egg white with an electric hand whisk until stiff peaks form, fold this carefully into your batter with a spatula, being mindful not to knock the air out.
- Pre-heat waffle iron to a high setting and brush with melted butter. Cook waffles according to manufacturer’s instructions, half ladle per waffle and 5 mins on almost max. (In a 700 watt waffle maker).
- Once crispy and golden brown, serve with toppings of your choice. Maple syrup and fresh cherries when they are in season are delicious. Heat in a pan together until just warm to really bring the cherries to life.
- Add softly whipped cream, spiked with Cinnamon if feeling indulgent!
