  • 175 grams soft pitted dates
  • 175 mililitres boiling water
  • 1 teaspoon bicarbonate of soda
  • 100 grams unsalted butter, softened plus extra to grease dish
  • 25 gams light brown soft sugar
  • 50 grams dark brown muscovado sugar
  • 2 tablespoons black treacle
  • 2 large eggs
  • 1/4 teaspoon Schwartz® Sea Salt
  • 125 grams self-raising flour
  • Sauce
  • 125 grams unsalted butter
  • 125 grams dark brown muscovado
  • 125 grams light brown soft sugar
  • 2 tablespoons black treacle
  • 175 mililitres double cream
  • 1/4 teaspoon Schwartz® Sea Salt

Instructions

  1. Pre-heat the oven to 150°C / 300°F / 130°C Fan / Gas Mark 2.
  2. In a small bowl add dates, boiling water, and bicarbonate of soda, stir, and leave for 15 minutes.
  3. While the dates soak, in a medium bowl, using a spatula cream butter and sugars until smooth and creamy.
  4. Then add the black treacle and mix again. Add the eggs one at a time, making sure one is fully incorporated before adding the next.
  5. Then fold in the sea salt and flour, keep gently mixing until the batter is smooth.
  6. Roughly mash the dates with a fork and add to the batter along with their liquid.
  7. Grease a 30cm x 20cm ceramic baking dish well with butter, pour in batter and place in pre-heated oven for 30 minutes.
  8. While the pudding cooks, make the sauce. In a medium saucepan, on a low heat melt the butter, sugars and treacle. Stir well and add the double cream and salt, bring to a simmer for a minute, take off the heat.
  9. Once the pudding has been cooking for 30 minutes, check with a skewer, if it comes out clean it’s done, if not put back for another 5 minutes and check again.
  10. Once the pudding is cooked, take out of the oven, and make tiny holes all over with a skewer/toothpick.
  11. Pour over half the sauce and leave to sit for at least 10 minutes before serving with extra sauce and double cream or ice cream!
