Grilled fruit is always a treat, especially when it’s been soaked in a heavenly blend of rum, sugar, and lime, and coated in brown sugar and cinnamon before charring to perfection. Enjoy these tasty grilled pineapple wedges with a scoop of vanilla or coconut ice cream and a garnish of toasted coconut and fresh lime – perfection!

Ingredients

  • 1 medium pineapple, peeled and cut into 3 cm x 10cm bars approx. 350g
  • 25 unsalted butter, melted
  • 1/4 sea salt mill adjustable
  • 1 dark brown sugar
  • 1 cinnamon ground
  • 2 rum
  • Rum syrup
  • 100 dark brown sugar
  • 25 unsalted butter
  • 50 dark rum
  • A squeeze fresh lime juice
  • To serve
  • 50 desiccated coconut, toasted
  • 1 lime, cut into wedges
  • 1 lime, zest
  • Vanilla ice cream (to serve)

  1. In a medium bowl, mix the pineapple with the glaze ingredients until well coated. *
  2. In a grill pan or on a BBQ, grill the pineapple until nicely charred on both sides and tender (approx. 5 minutes). While its cooking keep brushing with the leftover glaze. *
  3. Make the rum syrup- in a small saucepan heat the sugar and butter until bubbling, add the rum and reduce for 2 minutes until its syrupy. *
  4. Serve pineapple with vanilla ice cream, toasted coconut, rum syrup, lime zest and lime wedges. *
