Rum & Cinnamon Glazed Pineapple

Grilled fruit is always a treat, especially when it’s been soaked in a heavenly blend of rum, sugar, and lime, and coated in brown sugar and cinnamon before charring to perfection. Enjoy these tasty grilled pineapple wedges with a scoop of vanilla or coconut ice cream and a garnish of toasted coconut and fresh lime – perfection!
Ingredients

- 1 medium pineapple, peeled and cut into 3 cm x 10cm bars approx. 350g
- 25 unsalted butter, melted
- 1/4 sea salt mill adjustable
- 1 dark brown sugar
- 1 cinnamon ground
- 2 rum
- Rum syrup
- 100 dark brown sugar
- 25 unsalted butter
- 50 dark rum
- A squeeze fresh lime juice
- To serve
- 50 desiccated coconut, toasted
- 1 lime, cut into wedges
- 1 lime, zest
- Vanilla ice cream (to serve)

- In a medium bowl, mix the pineapple with the glaze ingredients until well coated. *
- In a grill pan or on a BBQ, grill the pineapple until nicely charred on both sides and tender (approx. 5 minutes). While its cooking keep brushing with the leftover glaze. *
- Make the rum syrup- in a small saucepan heat the sugar and butter until bubbling, add the rum and reduce for 2 minutes until its syrupy. *
- Serve pineapple with vanilla ice cream, toasted coconut, rum syrup, lime zest and lime wedges. *
