  • 225 grams dark chocolate
  • 2 tablespoons golden syrup
  • 125 grams unsalted butter
  • 175 grams digestive biscuits
  • 100 grams Blanched hazelnuts, roasted and roughly chopped
  • 50 grams mini marshmallows
  • 50 grams dried cranberries
  • 1 teaspoon Schwartz® Sea Salt

Instructions

  1. Line an 18-cm square baking tin with greaseproof paper.
  2. In a medium heatproof bowl melt the chocolate, golden syrup and butter together over a bain-marie on a low/medium heat until melted, stir to combine.
  3. Take the chocolate mixture off the heat and stir through the rest of the ingredients.
  4. Decant into the lined tin, making sure it’s spread well and packed into the corners keeping a rustic look on top (it is called rocky road after all!)
  5. Chill in the fridge for 2 hours minimum or overnight.
  6. Cut into 2-cm cubes.
  7. Cooking Tip We use a bain-marie method to melting chocolate to prevent the chocolate from seizing. Place a pan of water over medium heat on the stove. Place chocolate in heat proof bowl that fit on the pan of water. The water shoutd not touch the bottom of the bowl, the steam from the water will gently heat the bowl. The water should be at a simmer, but not boil. The bowl will be hot, so use caution.
