  • 750 new potatoes, halved
  • 1/2 rosemary
  • 1/2 thyme
  • 1 garlic granules
  • 1/2 parsley flat leaf
  • 25 unsalted butter

  1. Pre-heat oven to 200 degrees fan. *
  2. In a medium saucepan, in cold water, bring the potatoes up to the boil, par boil for 5 minutes and drain.
  3. *
  4. On a large baking tray, mix everything except the parsley and butter and place in the centre of the pre-heated oven. *
  5. Cook the potatoes for 20 minutes, remove from the oven, turn over and crush lightly with the back of a spoon. *
  6. Return to the oven for another 20 minutes, until golden and crispy. *
  7. Add the butter and parsley to the hot potatoes and mix well. *
  8. Serve and enjoy! *
