- 1 ripe avocado
- 1 tbs cider vinegar
- Juice of 1 lime
- 1 ½ tsp Schwartz Garlic Butter Seasoning
- 1 tbs olive oil
- 450g white cabbage, shredded
- 4 spring onions, finely chopped
- Small bunch coriander, chopped
- 450g King prawns, raw and peeled
- 2 tbs oil
- 1 tbs Schwartz Lemon Pepper seasoning
- 2 medium red chillies, sliced

King prawn skewers seasoned with Lemon Pepper and served over a fresh avocado citrus slaw.
- For the slaw, place the avocado, vinegar, lime juice, oil and seasoning into a food processor and blitz until smooth.
- Pour the mixture over the cabbage and spring onions in a large bowl. Add the coriander, reserving a little to garnish, and stir through. Place in the refrigerator while you prepare the prawns.
- Combine the oil and seasoning in a separate bowl. Add the King prawns and stir to coat.
- Thread the prawns onto mini skewers. Cook in a hot griddle pan, or air fryer at 200°C, for 4-5 minutes until cooked through.
- Serve the slaw on a sharing platter, top with the skewers and garnish with the remaining coriander and chillies.
