- 75 (3 ) butter, softened
- 100 (4 ) brown sugar
- 3 clear honey
- 2 medium eggs, beaten
- 225 (8 ) bananas, mashed
- 225 (8 ) self-raising flour
- 1 heaped allspice ground
- 1/4 bicarbonate of soda
- 225 (8 ) raisins

- Pre-heat the oven to 180°C, 350°F, Gas Mark 4.*
- Cream the butter and sugar together. Stir in 2 tbs honey. Add eggs and bananas. Mix well.*
- Sieve flour with the Allspice, bicarbonate of soda and salt. Carefully fold the flour mixture and raisins into the creamed ingredients.*
- Place in a 20 x 10cm (8 x 4) greased and lined loaf tin. Bake in the oven for approx.1 hour or until well risen and firm to touch. Remove loaf from tin. Glaze top surface with the remaining honey. Leave to cool.*
