  • 75 grams butter, softened
  • 100 grams brown soft sugar
  • 3 tablespoons clear honey, divided
  • 2 medium eggs, beaten
  • 225 grams ripe bananas, mashed
  • 225 grams self-raising flour
  • 1 1/4 teaspoons Schwartz® Ground Allspice
  • 1/2 teaspoon Schwartz® Sea Salt
  • 1/4 teaspoon bicarbonate of soda
  • 225 grams raisins

Instructions

  1. Pre-heat the oven to 180°C / 350°F / 160°C Fan / Gas Mark 4.
  2. With hand mixer, or standing mixer with paddle attachment, beat the butter and sugar together until light and fluffy. Stir in 2 tablespoons honey. Add eggs and bananas. Mix well.
  3. Sieve flour with the Allspice, Salt and bicarbonate of soda. Carefully fold the flour mixture and raisins into the butter mixture.
  4. Place in a 20 x 10-cm greased and lined loaf tin. Bake in the oven for bout 1 hour or until well risen and firm to touch. Remove loaf from tin. Glaze top surface with the remaining honey. Leave to cool.
