  • 6 skinless, boneless chicken breasts, cut into 2cm cubes
  • 2 curry powder medium
  • 1 garlic
  • 1 paprika
  • 1 extra virgin olive oil
  • 1 sea salt mill adjustable
  • Salad
  • 675 vine tomatoes, quartered
  • 2 red onion, very finely sliced
  • 2 black onion seed
  • 1 sea salt mill adjustable
  • 2 lime, juice
  • 2 extra virgin olive oil
  • Serve with
  • 4 flatbread
  • 1 lime, cut into quarters
  • 200 Greek yoghurt
  • Fresh Coriander (optional)

  1. In a medium bowl, add the chicken and all the marinade ingredients, mix well, cover with clingfilm and refrigerate for minimum 30 minutes or overnight to get the best flavour. *
  2. re-heat the grill to 200 degrees c. *
  3. Thread the chicken onto 4 metal skewers and place on a baking tray lined with foil and into the top of the oven, right under the grill. *
  4. Grill for 8 minutes, turn over and grill for another 10 mins until nicely charred and cooked through. *
  5. While the chicken cooks, mix all the salad ingredients together in a large bowl and set aside. *
  6. In a large dry frying pan, char the flat breads on a very high heat until hot and slightly charred. *
  7. Once everything is ready, serve the skewers on a platter with fresh lime, fresh coriander (if using), the yoghurt, salad and flatbreads on the side. *
