- Lemon Tahini
- 60 mililitres tahini
- 60 mililitres water
- 2 tablespoons fresh lemon juice
- 1/8 teaspoon Schwartz® Sea Salt
- Hawawshi
- 450 grams beef mince
- 1 medium tomato chopped
- 30 grams chopped fresh parsley
- 80 grams chopped white onion
- 2 chopped jalapenos
- 1 1/2 teaspoons Schwartz® Sea Salt
- 1 1/2 teaspoons Schwartz® Ground Cumin
- 1 teaspoon Schwartz® Ground Coriander
- 1/2 teaspoon Schwartz® Ground Allspice
- 1/2 teaspoon Schwartz® Garlic Powder
- 1/2 teaspoon Schwartz® Ground Black Pepper
- 1/2 teaspoon bicarbonate of soda
- 6 small pitta pockets, halved

- For the Lemon Tahini, whisk all ingredients in a small bowl until well blended. Cover and refrigerate until ready to serve.
- For the Hawawshi, place beef in a large bowl; set aside. Place remaining ingredients, except pittas, in a food processor. Pulse until the mixture is finely chopped. Add the mixture to the bowl with ground beef; mix just until blended. Divide the beef mixture into 12 portions.
- Preheat oven to 200°C / 400°F / 180°C Fan / Gas Mark 6. Heat barbecue on medium heat. Place 1 portion of the beef mixture in each pitta half, pressing as needed to fill pitta evenly. Brush the outside of pittas lightly with oil. Cook on barbecue just until lightly charred on both sides.
- Arrange in a single layer on a foil-lined sheet pan. Transfer the pan to the oven. Bake for 8 to 10 minutes or until beef is cooked through. Serve immediately with Lemon Tahini on the side.
