- 2 medium eggs, separated
- 75 golden caster
- 500 whole milk
- 75 double cream
- 100 rum
- 1 vanilla pod, seeds only
- 1/4 sea salt mill adjustable
- 1/4 nutmeg ground
- 1/4 cinnamon ground
- Schwartz Ground nutmeg, to serve

- In a medium bowl, using an electric whisk, mix the egg yolks and 50g of the sugar until thick and creamy.
- *
- In a pan heat the cream, milk and vanilla until steaming point. Add into the egg mix and mix well. Add back to the pan and with a normal whisk, on a gentle heat, whisk until thickened slightly (a couple of minutes). *
- Add the rum, spices and sea salt and mix again. Remove from the heat and leave to cool, refrigerate until cold. Once Cold, remove the vanilla pod. *
- In a medium bowl with an electric whisk, whip up the egg whites till foamy, add the remaining 25g sugar and whisk again until soft peaks. *
- Fold the egg whites into the cold egg mix until smooth. *
- Serve in glasses with some more nutmeg on top! *
