  • 225 grams water, warm NOT hot
  • 1 1/2 teaspoons dried yeast
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon caster sugar
  • Vegetable oil for cooking
  • Salted butter to serve

  1. In a medium bowl add flour and salt, mix. Make a well in the center and add warm water, whisking well, bringing the flour in, bit by bit. Mix for approx. 3-5 minutes until smooth and well beaten.
  2. Add yeast, baking powder and caster sugar. Whisk for a minute until well combined. Cover with a clean tea towel and leave to rest somewhere warm for 20 minutes.
  3. Once the batter has proved, take a non-stick frying pan and wipe some vegetable oil around the pan. Grease a metal crumpet ring well with oil and place in the pan, on a medium/high heat. Add batter to the inside of the ring, about 2.5cm thick (¼ of the way up the ring).
  4. Cook the crumpet until bubbles are all over the surface and it’s looking drier (approx. 10-15 minutes), carefully release the ring and flip the crumpet over using a spatula, cook for another minute and remove onto a plate.
  5. Slather with salted butter and eat warm!
  6. Cooking Tip Keep the crumpets warm in an 80-degree oven if you’re making a batch. Make sure the ring is clean and re-greased after each crumpet.
