Crispy Shredded Sprout Salad

Every bite of this Christmas salad is full of texture and flavour, making it the perfect side dish for all your Christmas festivities. From the crispy air fried and Schwartz-seasoned Brussels sprouts, to walnuts, sweet pomegranate seeds, shredded parmesan, and crispy bacon lardons, it all comes together with the bright sweetness of a homemade maple and mustard dressing.

- 500 brussel sprouts, trimmed and shredded
- 1 sauteed brussels sprouts with bacon
- 2 extra virgin olive oil
- 125 pomegranate seeds
- 100 walnuts, toasted and roughly chopped
- 100 rocket
- 50 parmesan, peeled into slivers
- 125 bacon lardons, fried and crispy (optional)
- Dressing
- 2 maple syrup
- 1 lemon, juice
- 2 extra virgin olive oil
- 2 wholegrain mustard
- 1/2 sea salt mill adjustable
- 1/2 ground black pepper

- Set air fryer to 180 °C.*
- In a medium bowl, add shredded sprouts, olive oil and the Sauteed Brussel Sprouts sachet. Give everything a good stir.

- Put sprouts in air fryer, about half full (you may have to do this in batches depending on the size of the air fryer). Cook for 5 minutes.
- *
- After 5 minutes, shake basket well and put on again for 5 minutes.
- *
- While sprouts are cooking, make dressing by combining everything and giving it a good whisk.

- To assemble the salad, place rocket on a large serving platter, top with sprouts, nuts, pomegranate, bacon lardons (if using) and parmesan. Drizzle over the dressing and serve.
