  • 8 chicken thighs, skin on
  • 2 olive oil
  • 2 Smoky All-Rounder Seasoning
  • Smoky yoghurt
  • 200 Greek yoghurt
  • 1 honey
  • 1/2 Smoky All-Rounder Seasoning
  • Corn and avocado salad
  • 150 Canned sweet corn
  • 2 avocado, cubed
  • 120 green Salad leaves
  • 5 radishes, thinly sliced
  • 150 feta cheese
  • A bunch of fresh coriander, roughly chopped (optional)
  • Dressing
  • 2 limes, juice of
  • 2 olive oil
  • 1/2 sea salt
  • 2 honey

  1. In a large bowl, mix chicken thighs, olive oil smoky seasoning. Leave to marinate for 30 minutes.

  3. Pre heat frying pan until very hot. Pre-heat oven to 200 degrees c fan.

  5. Place the chicken thighs, skin side down in the pan and cook for a few minutes until lightly charred, turn over and place on a baking tray in a single layer and roast in the oven for 15-20 minutes or until cooked through.

  7. While the chicken cooks, mix the smoky yoghurt ingredients together in a small bowl and set aside.

  9. Then make the dressing by mixing the ingredients together in a bowl.

  11. Mix all the salad ingredients together and toss through the dressing.

  13. Serve the chicken thighs with the salad and the yoghurt on the side.
