- 1 1/2 baking powder
- 1 mixed spice
- 1 ginger ground
- 1/2 sea salt mill adjustable
- 100 caster sugar
- 1 orange, zest
- 125 whole milk
- 50 light olive oil
- 1 large egg, room temperature
- 125 frozen cranberries
- 10 demerara sugar
- 10 jumbo oats

- Set Air fryer to 200 °C.*
- In a medium bowl, combine all dry ingredients (except demerara and oats) with a spatula.*
- In a separate medium bowl combine wet ingredients with a whisk.*
- Pour wet into dry and mix well with spatula. *
- Finally add frozen cranberries, quickly mix.*
- Spoon mixture into silicone muffin cases and top with a sprinkling of oats and demerara on each one.*
- Place in air fryer and cook for 12 minutes at 200 °C.*
- Remove from air fryer and leave to cool for 10 minutes before serving.*
