Courgette Fritter

These fritters are the tastiest way to use up that bounty of courgettes from your garden or farmers’ market. Seasoned with Smoked Paprika and herbs like Dried Dill and Dried Chives, they go great with eggs at breakfast or as a side to grilled salmon.

- 225 courgette, coarsely grated
- 2 large eggs, whisked
- 50 plain flour
- 1 garlic clove, minced
- 1 dill
- 1 parsley flat leaf
- 1 chives
- 1 paprika smoked
- 1 lemon, zest
- 1 sea salt mill adjustable
- 1/2 ground black pepper
- 100g feta cheese, crumbled
- 1 Tbsp extra virgin olive oil
- to serve
- Greek Yoghurt, to serve (optional)
- 2 Lemons, cut into wedges
- Fresh dill (optional)

- To a large bowl add the grated courgette and sea salt, toss and leave to sit for 10 minutes. Then using a clean tea towel squeeze out the excess moisture into the sink and return the courgettes to the bowl. *
- In a separate bowl, whisk the egg and flour toegther, followed by the rest of the ingredients, mix well with a spatula. Then and the strained grated courgette and mix again.

- In a large frying pan, heat the oil on a medium-high heat until hot. Spoon a large tablespoon of mixture into the pan and flatten a little with the spoon. Cook for a couple of minutes on each side and flip using a spatula. Once golden and cooked through (approx. 5 minutes), transfer to a serving plate and repeat until all the batter is used. *
- Serve warm with fresh lemon wedges, dill if you have it and some Greek yoghurt (if using). *
