Comptoir Libanais Chicken Shawarma with Rice

Ingredients
- For the Chicken
- 150 natural yoghurt
- 1 lemon, juice of
- 2 limited edition comptoir libanais shawarma seasoning
- 500 chicken thighs, boneless, skinless
- For the Rice
- 1 olive oil
- 1 onion, finely chopped
- 1 aubergine, chopped
- 1 red pepper, chopped
- 275 basmati rice
- 500 chicken stock
- 1 cinnamon sticks
- To serve
- Pomegranate seeds, optional
- 50 natural yoghurt
- 1 limited edition comptoir libanais shawarma seasoning
- 2 pickled green chillis, sliced
- Handful parsley flat leaf, chopped

- For the chicken, combine yoghurt, lemon juice and the Schwartz x Comptoir Libanais Shawarma seasoning blend in a bowl. Add the chicken and allow to marinate for a few minutes before cooking in an air fryer on high, or over a medium grill.*
- For the rice, fry the onion, aubergine and pepper for 4-5 minutes, add the rice and cook for a further minute. Add the chicken stock and cinnamon stick, cover and cook gently for 10-15 minutes until rice is cooked though.*
- To serve, season rice with salt to taste, top with pomegranate seeds and the sliced cooked chicken. Combine the yoghurt with the remaining seasoning and drizzle over. Finish with the chillies and parsley.*
