  • 200 mililitres softly whipped double cream

  1. Pre-Heat oven to 180°C / 350°F / 160°C Fan / Gas Mark 4. Grease 2 (20cm) round baking tins with butter and line the base with a circle of greaseproof paper.
  2. Cream butter and sugar together with an electric whisk until light and fluffy (this should take about 4-5 mins). Then 1 by one add eggs, not adding the next until the one before is fully incorporated. Beat in lemon zest and vanilla seeds (reserve the pod).
  3. With a spatula, fold in flour and salt until you have a smooth cake batter. Divide equally between two lined tins (weigh batter so you get equal tiers). Bake for 25-30 mins or until a skewer inserted into the middle comes out clean. Leave to cool in the tins until cold.
  4. While cakes are cooling in the tins , whip cream and if using, dice strawberries.
  5. Assemble the cake by turning one half, top side down and piping a thin layer of cream first, then dollop evenly the strawberry jam, if you want an extra punch of strawberry flavour add diced strawberries and top with the other cake, with the golden top facing up. Scatter golden caster sugar on top and serve.
