Shockingly simple, this easy shortbread cookie recipe comes together with just four simple ingredients. They’re buttery and crisp, with just the right amount of subtle sweetness, and great for pairing with a cup of tea or coffee.

- 325 (11 ) plain flour
- 225 (8 ) unsalted butter, cold and cut into cubes
- 125 (5 ) caster sugar (plus extra for sprinkling)
- 1 sea salt mill adjustable

- 1 30cm x 25cm approx. deep baking tray

- Pre-heat the oven to 170°C. *
- In a medium bowl, rub the butter into the flour until it looks like breadcrumbs. *
- Mix in the sugar and salt until combined. *
- Line deep baking tray with greaseproof and add the shortbread mix, pressing down and making sure it's in an even layer, spread to the corners. *
- Bake for 20 minutes, check and rotate the tray and bake again for a further 15 minutes. *
- Remove from the oven, cut into thick fingers while still warm, sprinkle with extra caster sugar and then leave to cool in the tray. *
