Ingredients

  • Dough
  • 225 mililitres whole milk, warm (NOT hot)
  • 450 grams strong white bread flour
  • 1 sachet (7 grams) instant yeast
  • 2 large eggs
  • 2 teaspoons Schwartz® Sea Salt
  • 75 grams caster sugar
  • 1 tablespoon Schwartz® Cinnamon Ground
  • 100 grams unsalted butter, soft
  • Filling
  • 175 grams light brown soft sugar
  • 125 grams unsalted butter, soft
  • 1 teaspoon Schwartz® Sea Salt
  • 2 teaspoon Schwartz® Cinnamon Ground
  • Topping
  • 2 honey, heated until liquid- loosen with a little boiling water
  • Demerara sugar for sprinkling (optional)
  • 20 grams unsalted butter for greasing the tin

Instructions

  1. Add all the dough ingredients into a stand mixer bowl, apart from the butter. Make sure the yeast is separate from the salt/sugar.
  2. Use the dough hook attachment and mix on a medium speed for 5 minutes until it comes together. Scrape down the bowl and return to the mixer on a medium speed and slowly incorporate the butter, bit by bit until it’s all-mixed in.
  3. Let the dough mix for another 10 minutes, until its shiny and elastic and comes away from the edges.
  4. Cover with clingfilm or a clean tea towel and place in the freezer for 30-40 minutes.
  5. While the dough chills, beat your filling ingredients with an electric whisk until they form a soft paste.
  6. Once the dough is cold, roll it out using a little flour till it’s a square approx. 30x30cm.
  7. Spread the filling evenly, right to the edges using a palette knife or spoon.
  8. Roll the dough from the bottom long side up to the top long side in a tight log shape. Transfer carefully to a tray lined with greaseproof paper and place in the freezer for 10 minutes to firm up.
  9. Cut off the ends and cut into 9 equal buns and arrange in rows of 3 with a little gap in between, in a deep baking tray well-greased with butter so that they fill the tin.
  10. Cover with a clean tea towel and leave to rise for 1 hour until almost doubled in size.
  11. Pre-heat the oven to 180°C / 350°F / 160°C Fan / Gas Mark 4.
  12. Bake in the centre of the pre-heated oven for 20-25 minutes until golden brown and cooked through.
  13. Once cooked, immediately brush with the honey mix and leave to cool slightly, sprinkle with demerera sugar if using and serve slightly warm.
