- Prep 2 sterilized 280 mililiter (9oz) jam jars. Place the chillis, red peppers and garlic in a food processor and pulse until finely chopped.
- Add the chilli mix to a medium saucepan, add the vinegar, sugar and salt. Stir.
- Simmer on a medium heat for 30-40 minutes, skimming any orange foam off the top with a ladle, until reduced by about 2/3rds. It should look shiny and thick.
- Leave in the pan to cool slightly, approx. 10-15 minutes then decant into two sterilized jars. Cooking Tip Once cool, check seals to ensure properly sealed. Sealed jars can be stored in a cool, dry place for up to a year. Once opened, regrigerate. For smaller chunks, cut plums into small pieces and gently mash at the end of cooking.
