A tasty chicken dish in a rich sauce of tomatoes and mascarpone, deliciously flavoured with aromatic basil, perfect with pasta to serve all the family.

Ingredients

  • 1 olive oil
  • 1 onion, finely chopped
  • 450 (1 ) boneless, skinless chicken breasts
  • 400 tin chopped tomatoes
  • 1 minced garlic
  • 1 basil
  • ½ sea salt
  • 3 mascarpone

Instructions

  1. Heat the oil and fry the onion over a gentle heat until softened but not coloured. Add the chicken and fry on both sides until golden.*
  2. Add the tomatoes, Garlic, Basil and Salt, bring to the boil, reduce heat and simmer covered for 10 minutes.*
  3. Stir in the mascarpone and simmer uncovered until the sauce has slightly thickened and the chicken is cooked through. Serve with Pasta.*
