Charred Courgette radish and feta salad

With grilled courgettes, radish, fresh lemon juice, salty feta, and a simple seasoning of Schwartz® Sea Salt and Black Pepper, this salad really hits the spot. Garnish with Schwartz Chilli Flakes and balsamic vinegar for an extra-special finish.

- 2 courgettes, very thinly sliced lengthwise
- 100 feta cheese
- 50 radishes, thinly sliced
- 25 watercress
- 1 lemon, zest
- 1/2 sea salt mill adjustable
- 1/4 black peppercorns mill adjustable cracked
- 1/4 chillies crushed 75g (or more depending on how much spice you like!)
- 1 extra virgin olive oil
- 1 Balsamic vinegar (optional)

- Heat the BBQ (or gridle pan) till its very hot/smoking. Add the courgette slices in a single layer, grill for approx. 2 mins, turn over and repeat until they have nice dark grill marks on both sides. Remove to a plate and repeat until all the courgettes are grilled. *
- To serve, lay the courgettes on a serving plate, sprinkle with salt, pepper and lemon zest. Scatter watercress, feta and radishes all over and finish with chilli flakes, olive oil and balsamic if you like.
