- Heat the BBQ (or gridle pan) till it’s very hot/smoking. Add the peaches flesh side down and leave till they have dark gridle marks (approx. 2 minutes), turn and leave again for another couple of minutes. Remove to a plate and set aside.
- Make the dressing ingredients by combining everything in a small bowl with a spoon until well mixed.
- Tear the burrata in half, arrange on a plate with peaches and the rest of the salad ingredients, drizzle over the dressing and serve with extra cracked black pepper!
