BBQ Peach, Burrata salad

Tastes like summer on a plate and comes together in less than 30 minutes? Count us in. From the creamy burrata to the char-grilled peaches, toasted hazelnuts, serrano ham and chopped olives, this dish is all things savoury and delicious.
Ingredients
- Dressing
- 2 extra virgin olive oil
- 1 wholegrain mustard
- 1/2 lemon, juice and zest
- 1/2 honey
- 1/2 sea salt mill adjustable
- 1/2 black peppercorns mill adjustable cracked
- Salad
- 150 burrata
- 2 peaches, de-stoned, quartered
- 25 hazelnuts, toasted and roughly chopped
- 25 rocket
- 4 slices (60g) Serrano ham slices (60g) Serrano ham
- 50 black olives, roughly chopped
- To Serve
- black peppercorns mill adjustable cracked

- Heat the BBQ (or gridle pan) till its very hot/smoking. Add the peaches flesh side down and leave till they have dark gridle marks (approx. 2 minutes), turn and leave again for another couple of minutes. Remove to a plate and set aside. *
- Make the dressing ingredients by combining everything in a small bowl with a spoon until well mixed.

- Tear the burrata in half, arrange on a plate with the rest of the salad ingredients, drizzle over the dressing and serve with extra cracked black pepper! *
