  • Dressing
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon wholegrain mustard
  • 1/2 lemon, juice and zest
  • 1/2 teaspoon honey
  • 1/2 teaspoon Schwartz® Sea Salt
  • 1/2 teaspoon Schwartz® Black Peppercorns, freshly cracked
  • Salad
  • 150 grams burrata
  • 2 peaches, de-stoned, quartered
  • 150 grams burrata
  • 25 grams hazelnuts, toasted and roughly chopped
  • 25 grams rocket
  • 4 slices (60 g) Serrano ham slices, optional
  • 50 grams black olives, roughly chopped
  • To Serve
  • Schwartz® Black Peppercorns

Instructions

  1. Heat the BBQ (or gridle pan) till it’s very hot/smoking. Add the peaches flesh side down and leave till they have dark gridle marks (approx. 2 minutes), turn and leave again for another couple of minutes. Remove to a plate and set aside.
  2. Make the dressing ingredients by combining everything in a small bowl with a spoon until well mixed.
  3. Tear the burrata in half, arrange on a plate with peaches and the rest of the salad ingredients, drizzle over the dressing and serve with extra cracked black pepper!
