- 3 large eggs
- 25 grams unsalted butter, melted

- 1 banana, halved
- 7 grams demerara sugar

- Pre-Heat the Oven to 190°C / 375°F / 170°C Fan / Gas Mark 5.
- Brush a 2lb loaf tin with melted butter and then shake flour all around the inside, tapping out the excess.
- In a medium bowl combine flour, baking powder, Mixed Spice, Salt and sugars well with a spatula. In another medium bowl, mash bananas with a fork until smooth with a few chunks. Add the eggs to the banana and whisk lightly until combined. Fold your banana/eggs into dry ingredients and mix until combined, then stir in melted butter.
- Pour into prepared tin, tap the tin gently twice on the worksurface to make sure the batter gets into the corners, top with the halved banana, inside facing up and sprinkle with demerara sugar. Place in preheated oven for 45 minutes to 1 hour or until a skewer comes out clean. Leave to stand for 10 minutes and turn out on to a cooling rack and leave to cool.
