  • 400g French green beans
  • 400g mangetout
  • 2 oranges
  • 2 tsp Schwartz Lemon Pepper Seasoning
  • 3 tbs olive oil
  • 2 tbs Schwartz Bagel Seasoning

A bright green bean and mangetout salad with orange, Lemon Pepper dressing and Bagel Seasoning.

  1. Have a large saucepan of salted water on a simmer. Trim the green beans and blanch for 3½ minutes, then remove and cool in a bowl of cold water or under a running tap.
  2. Repeat with the mangetout, boiling for 1 minute only. Cool with the green beans and drain.
  3. Zest one orange into long thin strips and reserve. Cut the orange in half and juice it.
  4. Combine the juice with the olive oil, Lemon Pepper, orange zest and salt to taste to make the dressing.
  5. With the remaining orange, remove the peel with a knife and cut into segments.
  6. When ready to serve, toss the dressing with the green beans and mangetout, top with the Bagel Seasoning and finish with the orange segments.
