  • 3 extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tahini
  • 1 lemon, juice and zest
  • 1/2 smoked sweet paprika
  • 2 sea salt mill adjustable
  • 1/2 cumin ground
  • A small bunch flat leaf parsley, chopped (optional)
  • To serve
  • Toasted pitta (optional)

  1. Place the aubergines on a sheet of foil on a baking tray under the grill at 220 ºC fan, rubbing with 1 tbsp olive oil and prick with a fork (otherwise they explode). *
  2. Cook for 10 minutes, turn using tongs and cook for another 10 minutes. Once they are soft and collapsing, remove from the oven, cut down the middle to release some steam and leave to cool for approx. 10 minutes. *
  3. While the aubergine cools, add the rest of the ingredients to a bowl, mix. *
  4. Scoop flesh out of the aubergine skins, add to other ingredients, either mash with a fork or blend with a stick blender until you get the consistency you want. *
  5. Alternatively, put this all in a food processor and pulse until its how you like it. Baba ghanoush is very subjective, some people like it smooth, some very chunky. The spices are also interchangeable, ground coriander works well here too! *
  6. Serve with more chopped parsley (if using), a drizzle of oilve oil and a sprinkling of smoked paprika. *
