2 skinless and boneless chicken thighs, diced into small chunks
1 tablesppon olive oil
1/4 teaspoon Schwartz® Sea Salt
1/2 onion, finely diced
1 garlic clove, minced
1 thumb sized piece of ginger, peeled and minced
1 tablespoon Schwartz® Mild Curry Powder
1 tablespoon tomato puree
250 grams passata
25 mililitres double cream
15 grams unsalted butter
Garnish
A handful of fresh coriander, chopped (optional)
1/2 teaspoon nigella seeds

Instructions
Set the air fryer to 200°C.
Place the oil, salt and chicken in an even layer in a deep cake pan insert into the air fryer. Cook for 12 minutes.
Take out chicken and put in a medium bowl and set aside.
Add onion in an even layer and cook for another 4-5 mins.
Add garlic and ginger, stir and cook again for 2 mins.
Add the chicken back, add curry powder and tomato puree, stir and cook for another 2 minutes.
Add passata, stir again and cook for 5 minutes.
Finally add the double cream, stir and cook for another 5 minutes. When its piping hot, take out the cake pan carefully using a tea towel, add the butter, taste it and season with more sea salt if needed.
Serve with rice and/or naan bread and top with nigella seeds and fresh coriander if using.
