Ingredients

  • Quick pickled red cabbage
  • 150 grams Shaved red cabbage (use a peeler)
  • 1 lime, juice of
  • 1/4 sea salt
  • Dressing
  • 3 tablespoons soy sauce
  • 3 tablespoons toasted sesame oil
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons mirin
  • 1 tablespoon runny honey
  • 1 lemon, juice of
  • 1 red chilli, very finely diced
  • Sushi Rice
  • 375 grams sushi rice
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 1/2 teaspoon salt
  • Salmon
  • 375 grams salmon, cut into 1 cm cubes
  • 2 teaspoons Schwartz® All Rounder - Zesty
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon runny honey
  • Garnishes
  • 250 Frozen edamame beans
  • 5 radishes, thinly sliced
  • 250 grams chopped cuccumber (about half a cuccumber)
  • 2 teaspoons black and white sesame seeds (mixed)
  • 4 spring onions, thinly sliced

Instructions

  1. First, make the pickled cabbage. Rinse the shaved cabbage with cold water till it runs clear. Drain and in a bowl, mix cabbage with lime juice and salt. Cover and set aside.
  2. Make the dressing by combining everything in a bowl and set aside.
  3. Bring a saucepan of water to the boil, blanch edamame beans for 5-6 mins, drain, run under cold water and set aside.
  4. Make the rice. Wash the rice until the water runs clear. Cook according to pack instructions.
  5. While the rice steams, mix the salmon with the seasoning, honey and sesame oil.
  6. Pan fry the salmon on a high heat, on all sides until just cooked through.
  7. Mix the rice vinegar, mirin and salt in a small bowl. Gently stir through the steamed rice.
  8. Assemble your poké bowls by adding the rice to the base, with a little dressing, top with salmon and all the different vegetables in sections.
  9. Top with black and white sesame seeds, spring onions and a drizzle of dressing on each.
