Zesty Salmon Poké Bowl

Loaded with fresh ingredients, colour, and flavour, poké bowls are a dining craze for good reason. Prepare this take with pan-seared salmon flavoured with Schwartz Zesty Seasoning and toasted sesame oil. Serve atop a bowl of sushi rice with fresh veggies like red cabbage, radishes, avocado, cucumber, and edamame.

- 375 salmon, cut into 1cm cubes
- 2 Zesty All-Rounder Seasoning
- 1 toasted sesame oil
- 1 honey
- 375 sushi rice
- 2 rice vinegar
- 2 mirin
- 1/2 salt
- Quick pickled red cabbage
- 150 Shaved red cabbage (use a peeler)
- 1 lime, juice
- 1/4 sea salt
- Dressing
- 3 soy sauce
- 3 toasted sesame oil
- 1 rice wine vinegar
- 2 mirin
- 1 honey
- 1 lemon, juice of
- 1 red chilli, very finely diced
- Garnishes
- 250 Frozen edamame beans
- 5 radishes, thinly sliced
- Half a cucumber (approx. 250g), cubed
- 2 black and white sesame seeds (mixed)
- 4 spring onions, thinly sliced

- First, make the pickled cabbage. Rinse the shaved cabbage with cold water till it runs clear. Drain and in a bowl, mix cabbage with lime juice and salt. Cover and set aside.

- Make the dressing by combining everything in a bowl and set aside.

- Bring a saucepan of water to the boil, blanch edamame beans for 5-6 mins, drain, run under cold water and set aside.

- Make the rice. Wash the rice until the water runs clear. Cook according to pack instructions.

- While the rice steams, mix the salmon with the seasoning, honey and sesame oil.

- Pan fry the salmon on a high heat, on all sides until just cooked through.

- Mix the rice vinegar, mirin and salt in a small bowl. Stir through the steamed rice.

- Assemble your poké bowls by adding the rice to the base, with a little dressing, top with salmon and all the different vegetables in sections.

- Top with black and white sesame seeds, spring onions and a drizzle of dressing on each.
