- 4 chicken thighs, boneless, skinless
- 2 olive oil
- 1 lime, zest and juice
- 1 1/2 piri piri
- 1 large red onion, cut into wedges
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 450 (1 ) sweet potatoes, cut into wedges
- 200 (7 ) pack of tender stem broccoli

- Marinate the chicken thighs with 1 tbs olive oil, Piri Piri Seasoning, zest and juice of a lime. Cover and set aside for 30 minutes at room temperature or overnight in the refrigerator. *
- Pre-heat the oven to 180゜C, 350゜F, Gas Mark 4.*
- Add the vegetables to a large baking tray and place the chicken thighs on top, spreading out evenly. *
- Cook in the oven for 40-45 minutes, until the chicken is cooked through and the juices run clear. *
- Serve with a side salad. *
