  • 2 olive oil
  • 1 lime, zest and juice
  • 1 1/2 piri piri
  • 1 large red onion, cut into wedges
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 450 (1 ) sweet potatoes, cut into wedges
  • 200 (7 ) pack of tender stem broccoli

  1. Marinate the chicken thighs with 1 tbs olive oil, Piri Piri Seasoning, zest and juice of a lime. Cover and set aside for 30 minutes at room temperature or overnight in the refrigerator. *
  2. Pre-heat the oven to 180゜C, 350゜F, Gas Mark 4.*
  3. Add the vegetables to a large baking tray and place the chicken thighs on top, spreading out evenly. *
  4. Cook in the oven for 40-45 minutes, until the chicken is cooked through and the juices run clear. *
  5. Serve with a side salad. *
