Ingredients
- Roast Potatoes:
- 700 potatoes
- 2 salt
- 1.5 bicarb
- 100 olive oil
- Flat-leaf parsley
- Salsa:
- 4 olive oil
- 1 flour
- 3 Smoky All-Rounder Seasoning
- 180 hot chicken stock
- 1 vinegar
- Salt
- Pepper
- Garlic Mayo:
- 150 mayo
- 1 garlic clove

- Roast Potatoes:*
- Peel/cube potatoes (2cm)*
- Boil with salt & bicarb for 8 mins*
- Strain, let steam off, season with The Smoky One and oil*
- Toss until edges burr*
- Roast at 220°C for 20 mins, flip, then roast for 20€“25 mins*
- Salsa:*
- Make a roux (combine oil + flour for 2 mins on heat)*
- Take off the heat, add The Smoky One, then put back on heat and whisk in the stock*
- Take off the heat, add vinegar, and season*
- Garlic Mayo:*
- Mince the garlic*
- Mix in the mayo *
