  • 350 curly macaroni pasta
  • 50 unsalted butter
  • 50 plain flour
  • 2 Smoky All-Rounder Seasoning
  • 750 whole milk, hot
  • 2 Dijon mustard
  • 2 Worcestershire sauce
  • 150 red Leicester cheese, grated
  • 150 Comte (or substitute with Emmental)
  • 75 parmesan cheese, grated
  • 100 mozzarella, grated
  • -
  • 50 parmesan to top
  • 1 chives, finely chopped
  • 10 rashers smoked streaky bacon
  • 1 olive oil

  1. Pre-heat the oven to 200 degrees fan.
  2. *
  3. Cook the pasta in boiling salted water for 8 minutes or 2 minutes less than the pack says. Drain and rinse with cold water.
  4. *
  5. In a medium pan, heat 50g butter until melted. Add flour and seasoning and whisk, slowly whisking in the hot milk.
  6. *
  7. Keep whisking in the milk on a medium heat until you have a smooth sauce, cook while bubbling for 4-5 minutes.

  9. Remove from the heat. Add the mustard, Worcestershire sauce, red Leicester, Comte, parmesan and mozzarella, and whisk again until they are melted and the sauce is fairly smooth.

  11. Stir all the pasta, but 1 large handful through the sauce and decant into a large oven proof dish.

  13. Sprinkle the rest of the pasta on top. Sprinkle parmesan on top.

  15. Bake at the top of the oven for 20 €“25 minutes until golden and bubbling.

  17. While the mac and cheese cooks, in a frying pan, cook smoked streaky bacon till very crispy, drain on paper towel and break into small pieces and set aside.

  19. Remove from the oven, let stand for a couple of minutes and top with chopped chives.

  21. Serve topped with crispy bacon bits and a vinegary green salad if you like!
