- 1 kilogram unsmoked gammon joint, skin removed, keep even layer of fat on top.
- 2 celery sticks, chopped
- 2 carrots, chopped
- 1 onion, chopped
- 1 teaspoon Schwartz® Black Peppercorns
- 1 Schwartz® Bouquet Garni
- 450 grams cloudy apple juice
- 2 cloves garlic, crushed
- Glaze
- 4 tablespoons maple syrup
- 1 teaspoon Schwartz® Whole Cloves

Instructions
- Place everything in the slow cooker, apart from the glaze ingredients.
- Set slow cooker to high and cook for 4 hours (if you want the gammon to a slice rather than shred, reduce this time to 3 hours), turning halfway through.
- After the gammon is cooked, remove from the cooking liquid and place in a deep baking tray lined with greaseproof paper.
- Pre-heat oven to 180°C / 350°F / 160°C Fan / Gas Mark 4.
- Score the fat in a criss cross pattern and stud with cloves. Pour over half the maple syrup.
- Place in the center of the pre-heated oven for 15 minutes.
- Pour over the rest of the maple syrup and return to the oven for another 10 minutes.
