  • 1 kilogram unsmoked gammon joint, skin removed, keep even layer of fat on top.
  • 2 celery sticks, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 teaspoon Schwartz® Black Peppercorns
  • 1 Schwartz® Bouquet Garni
  • 450 grams cloudy apple juice
  • 2 cloves garlic, crushed
  • Glaze
  • 4 tablespoons maple syrup
  • 1 teaspoon Schwartz® Whole Cloves

Feast on flavourful slow-cooker gammon this Christmas. A maple syrup and clove glaze balances out the saltiness of the ham, making this recipe a fragrant and festive addition to any menu.

Instructions

  1. Place everything in the slow cooker, apart from the glaze ingredients.
  2. Set slow cooker to high and cook for 4 hours (if you want the gammon to a slice rather than shred, reduce this time to 3 hours), turning halfway through.
  3. After the gammon is cooked, remove from the cooking liquid and place in a deep baking tray lined with greaseproof paper.
  4. Pre-heat oven to 180°C / 350°F / 160°C Fan / Gas Mark 4.
  5. Score the fat in a criss cross pattern and stud with cloves. Pour over half the maple syrup.
  6. Place in the center of the pre-heated oven for 15 minutes.
  7. Pour over the rest of the maple syrup and return to the oven for another 10 minutes.
