Sausage & Cannellini Bean Casserole

- 8 pork sausages
- 1 olive oil
- 1 red onion, finely diced
- 1 red pepper, finely diced
- 2 celery sticks, finely diced
- 900 (2 ) cannellini beans, drained and washed
- 400 (14 ) chopped tomatoes
- 2 tomato purée
- 1 sausage casserole
- 275 (9 ) water

- Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Place sausages on a baking tray and bake in the oven for 10 mins.*
- Meanwhile, heat oil in a large sauté pan, add onions, peppers and celery, sauté vegetables until soft.*
- Transfer to casserole dish and add beans, chopped tomatoes and tomato purée. Stir in the Schwartz Sausage Casserole Recipe Mix along with the water.*
- Add the cooked sausages to the casserole dish. Cook in the oven for a further 20 mins.*
- Serve with some delicious seasonal vegetables
