- 500 boneless, skinless chicken thighs or breasts, diced
- 400 tin coconut milk
- 1 small aubergine, sliced and quartered
- 1 red bell pepper, cut into chunks
- 100 water
- 1 Green Curry

- Heat the oil and fry the chicken for 5 minutes. *
- Add the coconut milk, aubergine, pepper, water and seasoning and bring to the boil.
