Roasted strawberries also make a great addition to porridge or yoghurt for breakfast.

- 450 strawberries, rinsed, hulled and halved
- 1 Vanilla Pod, deseeded
- 1 lemon, peel and half juice
- 2 golden caster sugar
- 1 ginger ground
- 275 double cream
- 25 icing sugar
- 50 pistachios, toasted and chopped

- Pre-heat oven to 200 degrees. *
- On a baking tray add strawberries, vanilla pod and seeds, caster sugar and lemon peel & juice. Mix well and make sure the strawberries are in a single layer. *
- Place in the centre of preheated oven for 15 minutes, or until well roasted and jammy. *
- Once the strawberries are cooked, leave to cool and remove the vanilla pod and lemon peel. *
- Make the whipped cream. In a medium bowl add the cream, icing sugar and ginger and whip with an electric whisk until very soft peaks form. *
- Serve the strawberries in bowls with pillowy ginger cream and toasted, chopped pistachios on top. *
