  • 1 tablespoon olive oil
  • 300 grams orzo
  • 1 onion, finely diced
  • 2 tablespoons Schwartz® All Rounder - Garlic
  • 750 mililitres vegetable stock
  • 200 grams frozen peas
  • 250 grams asparagus, cut into 2 cm pieces
  • 1/2 lemon, juice
  • 200 grams soft goats cheese, crumbled
  • 1 small bunch fresh dill, roughly chopped
  • 175 grams pink and purple radishes, a mixture of whole/halved/quartered

Instructions

  1. In a large, deep frying pan over medium heat, heat olive oil until hot. Add onion and sweat until soft. Add Garlic Seasoning and stir. Add orzo and vegetable stock and simmer while stirring regularly for 8 minutes until almost cooked.
  2. Add asparagus and peas and cook for 3-4 minutes until cooked through and the asparagus still has bite .
  3. Add lemon juice, check seasoning, and serve, topped with fresh radishes and crumbled goats’ cheese, topped with chopped dill and a little olive oil.
