Ingredients

  • 200 tin chopped tomatoes
  • 300 (1/2 ) water
  • 50 (2 ) dried apricots and/or sultanas
  • 25 (1 ) flaked almonds (optional)
  • 1 olive oil
  • 1 onion, sliced
  • 450 (1 ) lamb, diced
  • 1 1/2 moroccan

Instructions

  1. Pre-heat the oven to 180°C, 350°F, Gas Mark 4.*
  2. Heat the oil and fry the onion for 3-4 minutes, until softened. Add the lamb and cook for 4-5 minutes.*
  3. Transfer to a casserole dish. Blend the packet contents with the water and add to the dish wth the remaining ingredients.*
  4. Stir thoroughly, cover and cook for 1¼ hours, or until the meat is tender.*
  5. Delicious served with potatoes or couscous and your favourite green vegetables.*
