- 275 (10 ) potatoes, diced
- 100 (4 ) carrots, diced
- 3 oil
- 1 large onion, chopped
- 1 turmeric
- 2 cumin seed
- 2 coriander ground
- cayenne chilli pepper , a good pinch
- 2 garlic granules
- 100 (4 ) courgettes, diced
- 400 (14 ) tin tomatoes
- 100 (4 ) frozen peas
- Salt to taste

- Parboil the potatoes and carrots for 10 minutes until just tender. Drain.*
- Heat the oil and fry the onion until softened. Add the Spices and fry for another 2 minutes. Stir in the potatoes, carrots, courgettes and tomatoes. Simmer for 10 minutes until tender. Stir in the peas and salt and cook for another 5 minutes before serving.*
