  • 275 (10 ) potatoes, diced
  • 100 (4 ) carrots, diced
  • 3 oil
  • 1 large onion, chopped
  • 1 turmeric
  • 2 cumin seed
  • 2 coriander ground
  • cayenne chilli pepper , a good pinch
  • 2 garlic granules
  • 100 (4 ) courgettes, diced
  • 400 (14 ) tin tomatoes
  • 100 (4 ) frozen peas
  • Salt to taste

Instructions

  1. Parboil the potatoes and carrots for 10 minutes until just tender. Drain.*
  2. Heat the oil and fry the onion until softened. Add the Spices and fry for another 2 minutes. Stir in the potatoes, carrots, courgettes and tomatoes. Simmer for 10 minutes until tender. Stir in the peas and salt and cook for another 5 minutes before serving.*
