Jerk Chicken & Sweet Potato Recipe

Ingredients

- 1 olive oil
- 1 onion, chopped
- 4 boneless, skinless chicken breasts
- 4 jamaican jerk
- ½ thyme
- ¼ cumin seed
- 1 green pepper, diced
- 350 (12 ) sweet potato, peeled and diced
- Zest and juice of 1 lemon
- 3 tomato purée
- 425 tin pineapple chunks in natural juice
- 125 (4 ) water

- Heat the oil in a large frying pan and fry the onions for 1-2 minutes.*
- Add the chicken and cook for 2-3 minutes on each side.*
- Sprinkle in the Perfect Shake Jamaican Jerk Herb & Spice Blend, then add the remaining ingredients, including the pineapple juice, but reserving the pineapple pieces. Bring to the boil, stirring.*
- Cover the pan, turn down the heat, and leave to simmer for 25 minutes or until the potatoes are tender and the sauce has thickened. Stir in the pineapple pieces and heat through, uncovered, for 5 minutes.*
