Jamaican Jerk Chicken & Pineapple is a rich spicy dish with sweet potatoes or butternut squash and green peppers.

- 1 olive oil
- 1 onion, chopped
- 4 chicken breasts, boneless and skinless
- 4 jamaican jerk
- 1 green pepper, diced
- 350 (12 ) sweet potato or butternut squash, peeled and diced
- Zest and juice of 1 lemon
- 3 honey
- 4 tomato puree
- 425 tin pineapple chunks in natural juice
- 225 (8 ) chicken stock

- Heat the olive oil and fry the onion for 2-3 minutes, until browned.*
- Add the chicken breasts and cook for 2-3 minutes on each side.*
- Add the remaining ingredients and bring to the boil, stirring.*
- Cover and simmer for 25 minutes, or until the potatoes or squash are tender and the sauce has thickened.*
- Serve with rice.*
